Oh hello Thursday, nice to see you.
Ya’ came ’round so fast I done near ain’t ready for ya.
And now my English is all improper…darn head cold making me loopy.
Also making me tardy for this weekend’s festivities (Cinco de Mayo on a Saturday whatwhat!)
The only thing worse than weekday Cinco de Mayo, aka Everyday de Lauren, is weekend Cinco de Mayo with the inability to taste. Yep, that’s me, blasted head cold stole my sense of taste. I am miserable. And yes I referred to my weekdays as Cinco de Mayo, what can I say, I love Mexican food.
That’s why I’m sitting here with a chest full of Vicks, hot tea and an early bed time. Did I mention I can’t smell a thing? My cats, on the other hand, are going nuts. Vicks is apparently WACKO inducing like catnip. They’re quite entertaining so at least I get a smile out of it.
But I want my darn taste buds tasting again!
Skinny ‘rita to boot!
Alls we need here are lemons and sugar. Oh yeah and tequila, duh. Well, actually not so duh, this spiked lemonade was intended to be.. wait for it… lemonade.
Then we got tickets to Jack White and it quickly turned into tequila spiked lemonade. Not my idea, by the way. This one’s all the husband’s. I would totally of been a girl about it and added vodka, and then hated myself cause that’s not as good as this.
I might even go so far to say this is my new favorite summer spritzer! Since the sugar level is low there’s no immediate headache, stomachache or consciousache after knocking back a few. Yes, a few. These are too easy to drink. Think Firefly Sweet Tea vodka. Yes.
But think better
I can’t wait to enjoy them all summer long.
In the meantime I’m loading up on vitamins and sleep in the form of smoothies and power naps.
‘Cause when life hands you lemons, you make spiked lemonade for everyone else and go to bed early.
Cinco de Mayo or St. Patrick’s Day?
I’m going with Cinco de Mayo, Mexican food all the way!
skinny spiked lemonade
Prep Time: 5 minutes
Ingredients (4 servings)
- 1/2 c. fresh lemon juice, ~4 lemons
- 1.5 c. filtered water
- 2 Tbsp brown sugar, or 4 Tbsp raw sugar
- 6 oz. (3/4 c.) tequila
- sliced lemon, garnish
Juice the lemons over a strainer to collect the seeds and pulp. (I used a 4 cup measuring cup to prepare, it worked great.)
Add the sugar and water to lemon juice, mix well, the sugar may take a minute to dissolve, just mix every so often.
Add the tequila, stir well to combine.
Serve in a small glass filled with ice. Garnish with lemon slices.
