Ever in the mood for a savory snack but don’t feel like blowing your entire let’s-get-our-ass-in-gear-it’s-about-to-be-summer diet plan?
Yeah me neither.
For the record I don’t call them diet plans either – I call them lifestyle changes – and I’m sticking to it!
Now, I know cucumber salad isn’t exactly what comes to mind when you hear the words, savory snack.. but, BUT, this here refreshing slightly salty, sorta spicy cucumber salad has just the right amount of crunch and slices (no 9 chip portion here) that I think it just might workout.
And then you can workout.
Plus, it’s way faster to whip up than to choose what kind of chips you want. Well, if you have a horrible indecisive problem like me, it’s faster. It seriously takes me at least a good 7 minutes to decide what I want to eat, where ever I go. Except for Mexican restaurants – fajitas all the way!
If you’re wondering what those weird looking balls are up there, they’re farmer’s market cucumbers, aka the star of this recipe.
This little number is a no brainer.
Cucumber, citrus and salt’s all you need to get your crunch on. Cayenne and chili powder are optional but add a kick of fun.
Crunchy. Salty. Cucumber. Salad.

summer fresh cucumber salad
Prep Time: 2-3 minutes
Ingredients (1-2 servings)
- 1/2 cucumber, sliced into circles (or half moons) – organic please, if not, peel it
- 1/2 lemon or lime, juiced
- sprinkle pica seasoning (California chili, cayenne, limon and salt) – or just use a pinch of cayenne pepper and chili powder
- pinch sea salt (optional – if you just use cayenne/chili powder, add the salt, otherwise it’s probably not needed)
Slice cucumber (peel if not organic) add to small bowl
Squeeze over lime or lemon juice
Sprinkle cayenne, chili powder and salt (or use Pica seasoning, or your favorite similar type of seasoning)
