Rum Lime Chicken Fajitas

Weekends used to be my downfall. I could lose a pound or two a week, and then pack on 4 in one weekend with old habits like excessive drinking, overeating (usually out- with unknown caloric intake,) and sloth-like behavior.

Well, weekends have changed. They’re not the picture of health, but they’re an improvement.. Change is a work in progress, right?

Weekends usually include schmorgesborg of good eats, an array of tapas combined every which way; each just as delicious as the next.

Take fajitas for example: The ‘fried’ tortillas are easily broken into chips, allowing each bite the possibility of perfection. Layer cinnamon bell peppers and onions with perfectly moist rum spiked chicken thighs, for a cheaper take the on the traditional. Lettuce or shredded cabbage further extend the dish, making this a feast for the whole family. Tend to it throughout the day at your rightly earned weekend leisure.

Healthy fats are abundant in avocados, making guacamole the perfect side dish. Sour cream is a personal fav, but next time I’m gonna try making this raw vegan version – looks amazing.

Rum lime chicken is staying though- this was a real winner. I faux grilled it – on my indoor grill pan with the windows opened, once flipped, covered for full-proof juicy chicken. Bell peppers and onions follow on the same grill pan; cleaning discouraged.

Side dishes such as beans would make a splendid addition, as well as homemade salsa, sliced cucumber, radishes, and raw {straight up from the cob}corn.

Play with it as you wish, the rum lime chicken comes highly recommended, and if you’re into trying to new spice combos, cinnamon is a personal fav!

Rum Lime Chicken Fajitas

Prep Time: 10 minutes + 30 minutes marina

Cook Time: 20 minutes

Ingredients (6 servings)

  • 6 chicken thighs
  • 4 Tbsp grapeseed oil, (half for chicken, half for peppers)
  • 3 bell peppers
  • 1 red onion
  • 1/2 tsp cumin
  • 1/2 tsp sea salt
  • 1/2 tsp garlic
  • 1/2 tsp oregano
  • 1/8 tsp cinnamon
  • freshly ground black pepper
  • cilantro

Chicken Marinade

  • 1/2 c. rum
  • 2 limes, juiced and zested
  • ~3/4 tsp sea salt
  • 1/2 tsp garlic powder
  • freshly ground black pepper


Place the chicken in the marinade for at least 30 minutes, longer the better.

Meanwhile, slice the bell peppers and onions, toss the with spices.

Preheat the grill pan on med-high heat (or grill! – in that case, I would make bigger chunks of peppers/onions, or keep them whole) and add oil.

Place marinaded chicken on grill pan and do NOT move for 5 whole minutes, flip, and again do NOT move. After 3 minutes, turn heat down to medium-low and cover for the remaining 2-3 minutes.

Remove chicken, cover with foil and let rest for at least 5 minutes before slicing.

Turn grill pan back up to medium high, add more oil and add the peppers/onions mix. Don’t move for 2-3 minutes, then toss occasionally, turn heat to medium, and cook until your desired doneness- I do about 7 minutes total, for a little bit of leftover crunch.

Serve with guacamole lettuce, radishes, beans, cilantro, homemade tortillas and enjoy!

    this recipe sounds great! and your blog is hilarious. I too do the same thing. eat good during the week…then my husband is home and the margarita drinking begins.
    lucky for me every other weekend is spent on the mountain, so those snickers bars are burnt off.:)

    Now, this looks incredible. Some pigeon peas and rice or some vegetables with curry and these fajitas – talk about a feast. I can only imagine the kick it gets from adding rum to the mix. Excellent recipe.
