I’ve got a issue going on… I don’t feel like cooking. And with a husband out of town I can freely not do it and totally not feel bad about it. Oh.. but wait, I’ve got a food blog… shoot.
Well, how ’bout I meet you halfway. Here’s a faux recipe and a post to get to know Lauren a bit better.
Lauren likes to fake cook.
Lauren likes cheese, crackers and wine for dinner. That’s it.
Lauren loves sprouts and cheese and open face sandwiches.
I (enough with the third person) could eat an avocado every day and not even come close to boredom.
I like 5 minute meals with less than 5 ingredients.
I hate dirty dishes (I know I’m not alone.)
I absolutely love a clean kitchen (also not alone.)
I made myself like lemonade, sorta like mayo (especially with wasabi) and have a new obsession with hard boiled eggs. <– How did I go 27 years without eating these!
I read the back of every box/bag/container… and put about 90% of them back down. I don’t like eating ingredients outside of my vocabulary.
I’d eat these two open face sandwiches for breakfast, lunch and dinner… run out of ingredients… and then I’d buy more.
They are awesome.

Try an open sammy. It’s easy, delicious and there’s pretty much no clean up.
Win. Win. Win.

Open Face Sandwiches
Prep Time: 5 minutes
Ingredients (1 serving)
- 2 pieces sprouted bread
- 1/2 avocado, sprinkled with salt and pepper
- 1 c. sprouts (alfalfa and radish)
- 8 slices organic cucumber
- 1/2 small pear, sliced
- 3 slices grass-fed cheddar cheese
Toast the bread.
On one slice fork mash the avocado, layer the cucumbers and top with sprouts.
On the other, layer the pear, top with cheese and heat in the toaster oven until melted.
That’s it. Enjoy!
