Lazy Sunday

You know what they say, early bird gets the worm. But.. but it’s Sunday, day of relaxation, day of rest. Oh well, I got a little rest yesterday, today’s schedule is full. Come back later to check out my first craft attempt and a recipe for raw broccoli salad. Easiest side of your life!

Until then I’ll leave you with a splendid complete breakfast. Eggs, peas, prosciutto and mulitgrain sprouted toast. May sound like a weird combo but don’t knock it till you try it!

My friend Sophie told me about peas and hard-boiled eggs and I admit I was a little wary at first, especially because I was never too keen on hard-boiled eggs in the first place. They remind me of deviled eggs, which remind me of mayo, which if you may recall I have issues with and would die at the thought of an egg full of mayo! Yuk. Anyway no mayo here, just protein, fiber, fat and that’s not even counting the peas.

Peas, rich in fiber and protein, are a solid source of Omega-3 fats, although a low-fat food. Peas also offer key antioxidants and anti-inflammatory benefits, with a recent study showing individuals having a lower risk of stomach cancer with daily consumption. Bring on the peas!

I added the spirals of prosciutto for a little extra flavor, but totally not necessary. I’ve eaten this for lunch plenty of times with just a cup of boiled peas and one hard-boiled egg plus some S & P. Good. Really good. Surprisingly good. Sometimes I like to add a garlic clove to the boiling peas, just for a little extra flavor. (Yes even at breakfast, to me garlic knows no time.)

    I would never think of peas for breakfast or on a fried egg but b/c I love both eggs and peas I will give it a try!!
