A tad meaty..
And super healthy.
Then again, I’m down for anything I can eat with one hand now that I’m officially only left handed for the next 6-8 weeks while my broken wrist unbreaks itself.
Soup’ll do the trick.
What makes you crave soup?
Kale Kielbasa Lentil Stew
Prep Time: 10-15 minutes
Cook Time: 1 hour
Ingredients (6-8 servings)
- 12oz. Turkey kielbasa, cut into chunks
- 1 c. Lentils, thoroughly rinsed
- 4 c. Chicken stock
- 1 -28oz. can San Marzano tomatoes
- 3-4 c. Kale, chopped
- 2 Onions, 1 chopped, 1 minced (food processor)
- 2 carrots, chopped
- 5 garlic cloves, minced (food processor)
- 1 tsp fresh rosemary, chopped
- 1 tsp sea salt, divided in half
- 1/4 tsp dried oregano
- 1/4 tsp dried thyme
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes
Start by heating a little bit of oil in a large pot over medium-high heat, then add the turkey kielbasa. After about five minutes add the onions, carrots, garlic and spices (half the salt), and sauté for 20 minutes.
Add the can of tomatoes and turn the heat to medium low for another 10 minutes.
Next add the lentils, chicken stock and remaining half teaspoon of salt. Bring to boil for 5-7 minutes, then cover and cook for another 30 -40 minutes, or until the lentils are tender. Or you can just use precooked lentils and cook until heated through.
With about 10 minutes left in the cooking process add the kale.
Serve with a grate of Parmesan cheese
