Today, I’ve got my take on a classic.
Don’t mess with the classics.. that’s what they say, right? Momma was always about the classics, not trends or fads. She’d say, “A classic look never goes out of style.” And proceed to take me Ralph Lauren, Polo and Coach outlet malls (way better bargains)… and name me Lauren Ashley… kinda like Laura Ashley.
I thank her for the style though.
I was aiming to imitate a classic with this recipe and I see why its suck around so long.
This junk is gooood.
Sorrel was my twist, it’s a lemony herb that doesn’t overpower or hide in the shadows.
Simple. Elegant. Transportable.

Honeydew Prosciutto Mint Salad
Prep Time: 5 minutes
Ingredients (4 servings)
- 2 c. melon balled honeydew melon
- 2-3 ounces reduced fat feta cheese
- 1-2 slices prosciutto, rolled and sliced
- 1-2 tsp chopped herbs (mint and sorrel)
Start by melon balling the honeydew. A melon baller works great, but so does a tsp. Simply scoop with the tsp and turn into 360 degrees to make a ball. Scoop out the balls- no need for them to be perfect- and place in a medium bowl.
Add the prosciutto, crumbled feta and chopped herbs. Toss to combine.
Enjoy cold or a room temperature.
