I seriously can’t believe I hadn’t thought of this before.
I mean the ingredients were all there.

Mini pitas. Ricotta. Tomatoes. Garlic. Oregano. Instant pizza inspiration.
Mini whole wheat pitas from Trader Joe’s deliver the perfect crust!
I baked them first with the garlic, herbs and shallots, ya know, to take the edge off (leaving a garlic hue, not a punch in the face.)
And get them super crispy!.
Combination 1: the inspiration.
Garlic, ricotta, tomato, oregano.
Combination 2: Spanish influence.
Spanish chorizo, shallot, goat cheese, arugula.
Combination 3: going gourmet.
Blue cheese, garlic, rosemary, honey.
It’s hard to tell which was my favorite, but I might have to say the blue cheese honey combo.
Definitely fancy tasting, but these took no time at all!
Substitute the chorizo for mushrooms and get a complete vegetarian cuisine!
I really liked the array of this quick and easy lunch.
Seriously, the options are endless.
Think prosciutto, bell peppers, red onion, pepperoni, grapes, basil, sausage, feta…
With a meatless option, and a platform to create whatever your fridge gives you, these quick and healthy pizzas are sure to satisfy and become a favorite all around.

mini pita pizzas

Prep Time: 5 minutes
Cook Time: 7 minutes
Ingredients (1 servings)
- 3 – 5 mini whole wheat pitas
- Combo 1:
- 1 Tbsp part skim ricotta cheese
- 1/2 garlic clove, sliced
- 1/4 tsp dried oregano
- sprinkle sea salt
- 2 slices Roma tomato
- Combo 2:
- 1 tsp goat cheese
- 4 slices shallot, thin
- 4 arugula leafs
- 2 slices Spanish chorizo
- Combo 3:
- 1 slice blue cheese
- 1/2 garlic clove, sliced
- 1/4 tsp fresh rosemary, chopped
- 1/2 tsp honey
Instructions
Slice garlic and shallot, place on pita with desired herbs.
Place in toaster oven at 400 degrees for 3-5 minutes, until pitas are crisp.
Remove from oven, add cheese and toppings.
Return to toaster oven for 2-3 minutes, until toppings are heated through/melting.
Enjoy!
