easy healthy lunches and meatless mondays feature mini pita pizzas

Posted on February 27th, 2012  |  9 Comments

I seriously can’t believe I hadn’t thought of this before.

I mean the ingredients were all there.

Staring.me.in.the.face.

Mini pitas. Ricotta. Tomatoes. Garlic. Oregano. Instant pizza inspiration.

Mini whole wheat pitas from Trader Joe’s deliver the perfect crust!

I baked them first with the garlic, herbs and shallots, ya know, to take the edge off (leaving a garlic hue, not a punch in the face.)

And get them super crispy!.

Combination 1: the inspiration.

Garlic, ricotta, tomato, oregano.

Combination 2: Spanish influence.

Spanish chorizo, shallot, goat cheese, arugula.

Combination 3: going gourmet.

Blue cheese, garlic, rosemary, honey.

It’s hard to tell which was my favorite, but I might have to say the blue cheese honey combo.

Definitely fancy tasting, but these took no time at all!

Substitute the chorizo for mushrooms and get a complete vegetarian cuisine!

I really liked the array of this quick and easy lunch.

Seriously, the options are endless.

Think prosciutto, bell peppers, red onion, pepperoni, grapes, basil, sausage, feta…

With a meatless option, and a platform to create whatever your fridge gives you, these quick and healthy pizzas are sure to satisfy and become a favorite all around.

Looking to entertain? Mini pita pizzas couldn’t be easier. Just lay out the pitas, toppings and let everyone get food inspired.

If you’re searching for for a crunchy crust and loads of real deal pizza power, you’ve found the right dish.

I’d say 4 is a good serving size. Or 5. :)

Happy Monday!

  1. Love the flavor combos you chose- the blue cheese one sounds incredible especially! Pizza bagels were one of my favorite dinners growing up, used to beg my Dad to make them!
