Sometimes I hear voices.
coming from my kitchen.
Mostly splurge purchases from the farmers market begging me to deconstruct and recreate them into a remarkably mouth-watering, dollar-worthy assemble.
Though on the rarity I hear expired salad dressings moan from fridge exhaustion, or yogurt squeals from surpassing it’s peak, guess they don’t last forever.
Yesterday, it was week old organic fennel that ever so gently reminded me of her cost and temporary status on this earth.
Aw shucks, I was going to make an avocado/salsa thing.
And I already went (out of my way) to buy the avocado and Serrano pepper and got all riled up cause Vons doesn’t carry squat organic, and I really wanted to use cilantro. But that’s another story. and why I shop at farmers markets, Trader Joes and Whole Foods. Yeah, Whole Foods, it’s expensive, sure, and I don’t buy much there, but when I need cilantro in a pinch, I know they’ve got it pesticide free. And that matters to me.
Anyhoodle, back to this irritating fennel. I needed to use her up, get her out of my face fridge, so into the pool she went. Corn, tomatoes and avocado to boot, I figured I’d just call it a relish ’cause well, why not call it a relish, that’s why.
Relish, guacamole, salsa, whatever it is, it likes fennel. They’re real good friends. They make one ridiculously dank dippable sauce.
Eat it on chicken, fish, chipotle burgers, black bean burgers, tacos, enchiladas, chilaquiles, broccoli, sweet potatoes, blackened mushrooms, toast, crackers, tortilla chips, or straight from the bowl. Any which way, it’s delicious!
I may or may not have tried 8 of the 11 ways above.

corn fennel avocado relish

Prep Time: 5-10 minutes
Ingredients (~1 cup)
- 1 avocado, diced
- 1 tomato, diced
- 1/4 small red onion, finely diced
- 1/2 bulb fennel, thinly sliced and diced
- 1/4 c. sweet corn
- 1/2 Serrano pepper, minced (substitute: jalapeño, poblano)
- 1 tsp fresh oregano, finely chopped (substitute: cilantro, parsley)
- 1/8-1/4 tsp sea salt
- 1 lime, juiced
Instructions
Toss everybody in the bowl and gently stir to combine.
Enjoy atop tacos, enchiladas, fish, chicken or some good old fashion tortilla chips!
