It’s been a mere 9 months since I started blogging and I am in love. Not only do I find it challenging, inspiring and stimulating, it’s fun!

Nuts are rich in healthy fats like monounsaturated fats that have been found to help reduce the risk of heart disease (1).
Pecans are rich in antioxidants and ridiculous flavor. (and go great with chocolate)
Almonds have plenty of Vitamin E to share. (and go great with chocolate)
Cashews are chock full of copper, aiding with energy production and free radical elimination in the body (2). (and go great with chocolate)
Nuts are one of my favorites snacks (along with dates,) I love the salty flavor and hunger killing qualities!

chocolate coconut nut clusters

Prep Time: 5 minutes
Freeze Time: 20 minutes
Ingredients (4-8 servings)
- ~5 ounces chocolate, melted (dark and/or milk, I used a combo)
- 1-2 Tbsp chopped nuts, (I used pecans and almonds)
- 1-2 Tbsp unsweetened coconut flakes, lightly toasted at 350 degrees for 2-3 minutes, until lightly golden
- sprinkle sea salt
Instructions
In a double boiler (a glass bowl over a saucepan of simmering water, water is not touching bowl), melt the chocolate. Then pour it into a parchment paper lined glass dish and top with the nuts, coconut and salt.
Place in the fridge or freezer to cool and set.
Remove and break into clusters.
Enjoy!



















I love soaking cashews to use in vegan recipes. The flavor and texture are do different! My absolute favorite way to snack on nuts though, is just mixed with some chocolate chips. Easy, delicious and dangerous!

Hooray from this Registered Dietitian on your touting of the fabulous-ness of nuts! I’ll always support them, and even more so when the prospect of receiving some gratis is on the table. For me, I think some homemade nut butter would be in order.

I keep readig articles about the health benefits of chocolate and nuts (especially chocolate)…for calorie purposes, there is always a negative connotation associated with chocolate, but all this recent research says that is BULL-ony!
I love this little treat you’ve fashioned up – I’m big on chocolate and nuts and you just present the whole thing so well. Way to get a simple, healthy treat out there!

Almond milk and cashew butter sound like the perfect things to me, and I’ll happily eat pecans with just about any food imaginable.
I would eat them sprinkled on top of my oatmeal every morning for breakfast. I also really want to experiment making different nut butters.
